Introduction
Isoamyl Caprylate (CAS 2035-99-6) is a colorless liquid with a fruity odor, a boiling point of 267–268°C (at atmospheric pressure), a density of 0.861 g/mL (at 20°C), and a flash point of approximately 104°C. It is slightly soluble in propylene glycol, soluble in ethanol, and insoluble in glycerol and water. It occurs naturally in bananas, cheese, brandy, and various alcoholic beverages. It is irritating to the eyes, skin, and respiratory tract. It may be used as a food flavoring agent. It poses a slight hazard to aquatic environments; discharge of the undiluted product into the environment is prohibited.
Applications
Isoamyl octanoate is a colorless liquid. It exists naturally in bananas, cheese, brandy, rum, cider, sherry, white wine, apple brandy, etc. It has a fruity aroma and a brandy-like aroma after dilution. It is insoluble in water but soluble in ethanol.
Isoamyl octanoate can be used as a food flavoring and used to prepare various fruit flavors and wine flavors such as rum and brandy.
