Introduction 

Methyl 2-furoate (CAS 611-13-2) occurs naturally in roasted peanuts, cocoa, coffee, cranberries, guava, raisins, roasted potatoes, roasted hazelnuts, tomatoes, okra, and other foods. At room temperature, it is a colorless to pale yellow oily liquid that gradually turns yellow upon exposure to light; therefore, it should be stored away from light. Store in a tightly sealed container in a cool, dry place. It has a relative density of approximately 1.179, a boiling point of approximately 181.3°C, a melting point of approximately 36°C, a flash point of approximately 73.3°C, and a refractive index of approximately 1.4860. It is slightly soluble in water and soluble in organic solvents such as ethanol and diethyl ether. It is irritating; its vapors are irritating to the eyes and skin, and it may be harmful to the environment.

Applications

Methyl 2-furoate is an important new synthetic flavor, widely used in food flavors, tobacco flavors, cosmetic flavors and other industries. At the same time, it is also an important chemical raw material and intermediate, which can be used as a gasoline anti-knock agent to improve gasoline quality, and also has anti-tumor activity.
