Introduction
Palmitic acid ethyl ester has a faint wax, fruity and creamy aroma. It is soluble in ethanol and oils, insoluble in water, and has a melting point of 24~26℃. Natural products exist in apricots, sour cherries, grapefruit juice, black currants, pineapples, red wine, apple brandy, black bread, lamb, rice, etc.
Palmitic acid ethyl ester is used to prepare flavors for butter, tallow, milk, pork, fish, and spices. It can also be used to prepare rum flavors.
