Chondroitin sulfate is an acidic mucopolysaccharide extracted from the cartilage of chicken, cattle, shark and pig, mainly chondroitin sulfate A and C. Chondroitin sulfate is widely present in the cartilage tissue of animals, and also in bone tendons, ligaments, skin, cornea and other tissues. In cartilage, chondroitin sulfate combines with protein to form proteoglycans, and is combined with collagen. Chondroitin sulfate is a white or off-white powder, hygroscopic, easily soluble in water, and almost insoluble in acetone and 96% ethanol.
