Introduction
Trehalose, a natural sugar found in many desert plants, is formed in a layer of glassy matrix, which increases the resistance of plants and animals to dehydration.
Trehalose is a non-reducing sugar composed of two glucose units connected by a 1-1α bond. This combination makes trehalose very resistant to acid hydrolysis, so it is stable in high-temperature solutions even under acidic conditions. This combination keeps the non-reducing sugar in a closed ring form, so the aldehyde or ketone end groups do not bind to the lysine or arginine residues of the protein, preventing glycosylation. Therefore, trehalose can be widely used as an active ingredient in skin care products such as anti-aging and moisturizing.
Trehalose is also used as a sweetener and flavor enhancer in baked products.
