Introduction
Glucose oxidase, abbreviated as GOD, is produced by deep-air-ventilated fermentation using Penicillium chrysogenum, followed by precipitation with ethanol and acetone, adsorption onto kaolin or aluminum hydroxide, and subsequent salting out and purification with ammonium sulfate. It can also be produced using Penicillium notatum and Aspergillus niger. It appears as an almost white to pale yellow powder or a yellow to brown liquid. It is soluble in water, and its aqueous solution is generally pale yellow. It is practically insoluble in ethanol, chloroform, and diethyl ether.
Glucose oxidase can catalyze the reaction of β-D-glucose to produce gluconic acid.
