Introduction
Isoamyl butyrate (CAS 106-27-4) is an organic compound with the molecular formula C9H18O2. It is a colorless or slightly yellow, transparent liquid with a fruity aroma reminiscent of bananas and pears. boiling point of 168.9°C (at atmospheric pressure), a density of 0.8627 (20/4°C), and a flash point of 57.8°C. It is practically insoluble in water, propylene glycol, and glycerol, but readily soluble in ethanol, diethyl ether, and mineral oil. It is classified as a flammable liquid (GHS classification), is irritating to the skin and eyes, and its vapors at high concentrations are anesthetic.
Applications
Isoamyl butyrate has a strong banana and pear aroma. It is easily soluble in organic solvents such as ethanol and ether. It is almost insoluble in water, propylene glycol, and glycerin.
Isoamyl butyrate can be used as a food flavoring, and is often used to prepare fruity food flavors such as apples and bananas, as well as the flavoring of rum. The dosage is based on normal production needs, generally 570 mg/kg in chewing gum; 79 mg/kg in candy; 51 mg/kg in baked goods; 34 mg/kg in cold drinks; 13 mg/kg in soft drinks.
