Introduction
Nisin is an antibacterial peptide produced by Lactococcus lactis. It can effectively inhibit the reproduction of Gram-positive bacteria and pathogens that cause spoilage, especially heat-resistant Clostridium botulinum and Listeria.
Nisin is colorless and odorless, has good water solubility, strong stability, and has significant heat and pressure resistance in an acidic environment. It is highly safe and can be decomposed into a variety of amino acids by human digestive enzymes. It is widely used in food, cosmetics, medicines, and health products.
